One day on our return drive to Ahmedabad we stopped for a brief break to get our driver some tea, so he didn't fall asleep at the wheel. Whilst there fresh Gujarati snacks where being made outside the shop.

The cook placed a quantity of a lentil flour dough on to a special iron sieve,
which had slots in it. It was supported over a vat of very hot fat.
He
then proceeded to push the batter through the sieve, he must have hands of asbestos.

dough came through as long thin strips and these where then fried in the fat for
a few minutes.
