Snack Making

One day on our return drive to Ahmedabad we stopped for a brief break to get our driver some tea, so he didn't fall asleep at the wheel.  Whilst there fresh Gujarati snacks where being made outside the shop.

The cook placed a quantity of a lentil flour dough on to a special iron sieve, which had slots in it.  It was supported over a vat of very hot fat.

He then proceeded to push the batter through the sieve, he must have hands of asbestos.
